Krude Courgette and Mint Spaghetti

Get a large pan hot, then add the oil. Medium–high - you want it ready, not timid.

In with the courgettes. Don’t fuss with them.
Leave them to catch, colour, and caramelise for 8–10 mins. Tender, golden, still holding shape. -
Off the heat. Let them sit.

Cook the pasta until just tender. Before draining, grab 150ml of that starchy water. Then drain.

Back on the heat with the courgettes. In goes the pasta, parmesan, and half the pasta water.

Toss hard. Let it come together into something glossy and thick. Needs more? Add the rest of the water. Keep tossing.

Remove pan from heat, toss through the sliced mint, get it served and devour immediately.
